  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 cup grated carrots (freshly grated)
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
  2. In a bowl, whisk together flour, brown sugar, granulated sugar, baking powder, cinnamon, nutmeg, and salt. Set aside.
  3. In another bowl, beat softened butter until creamy. Gradually add both sugars and mix until fluffy. Add eggs one at a time until fully incorporated.
  4. Gently fold the dry ingredients into the wet mixture until just combined. Stir in grated carrots and walnuts if using.
  5. Pour the batter into the prepared baking dish and bake for 25-30 minutes or until golden brown. A toothpick inserted in the center should come out clean.
  6. Let cool for 10 minutes in the pan before transferring to a wire rack to cool completely before slicing.
