  • 1 cup brown sugar
  • ½ cup coconut cream
  • 1 tsp agar-agar powder

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a bundt pan.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time along with vanilla extract.
  4. Gradually mix dry ingredients into the creamed mixture with coconut milk until just combined; fold in chopped pecans.
  5. Pour batter into the prepared bundt pan and smooth the top.
  6. Bake for 45-50 minutes or until a toothpick comes out clean. Cool in the pan for ten minutes before transferring to a wire rack.
  7. For the glaze, combine brown sugar, coconut cream, and agar-agar in a saucepan over low heat until thickened. Drizzle over cooled cake before serving.
