  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 3 tbsp extra virgin olive oil
  • 1 cup feta cheese, crumbled
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper on both sides.
  3. In a bowl, combine feta cheese, olive oil, and minced garlic; mix well.
  4. Place seasoned chicken in the baking dish and spread the feta mixture generously on top.
  5. In another bowl, whisk together lemon juice, honey, Dijon mustard, and oregano until smooth.
  6. Pour half of the vinaigrette over the chicken and bake for 25-30 minutes until fully cooked.
  7. Drizzle remaining vinaigrette over the chicken before serving.
