  • 8 oz dark chocolate (70% cocoa), chopped
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 cup fresh raspberries
  • ½ cup unsalted butter, melted
  • 1 ½ cups graham cracker crumbs
  • 2 tbsp cocoa powder

Instructions

  1. Preheat oven to 325°F (160°C) and grease a springform pan.
  2. In a bowl, mix graham cracker crumbs, melted butter, and cocoa powder. Press into the bottom of the pan.
  3. Melt dark chocolate over a double boiler or microwave; let cool slightly.
  4. Beat cream cheese until smooth; add sugar, then sour cream and melted chocolate; blend until creamy.
  5. Gently fold in raspberries.
  6. Pour batter over crust and bake for 45-50 minutes until set but slightly jiggly. Cool in the oven for an hour, then refrigerate for at least four hours before serving.
