  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 3 cloves garlic (minced)
  • 1 medium onion (diced)
  • 2 celery stalks (chopped)
  • 2 medium carrots (sliced)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, sauté diced onion, minced garlic, chopped celery, and sliced carrots in olive oil until softened (about 5 minutes).
  2. Add vegetable broth and coconut milk; bring to a simmer while stirring occasionally.
