  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar (divided)
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 2 ripe bananas, sliced (plus more for garnish)
  • 2 tsp vanilla extract
  • 2 cups whipped topping

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter and ¼ cup sugar. Press into the bottom of a greased springform pan.
  2. In another bowl, beat cream cheese until smooth. Gradually add remaining sugar and sour cream, mixing well. Stir in vanilla extract.
  3. Pour half of the cheesecake filling over the crust, layer with banana slices, then pour remaining filling on top.
  4. Bake for 55-60 minutes until edges are set but center is slightly jiggly. Cool at room temperature before refrigerating for at least four hours.
  5. Once chilled, top with whipped topping and garnish with additional banana slices if desired.
