  • 4 to 5 pounds boneless skinless chicken thighs
  • ½ cup packed light brown sugar
  • ½ cup ketchup
  • ½ cup light soy sauce
  • ½ cup pineapple juice
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 3 tablespoons apple cider vinegar
  • ½ teaspoon cumin
  • ½ teaspoon coarse black pepper
  • ½ teaspoon smoked or sweet paprika

Instructions

  1. Rinse the chicken thighs under cold water and pat dry.
  2. In a large bowl or Ziploc bag, mix together light brown sugar, ketchup, soy sauce, pineapple juice, ginger paste, garlic paste, apple cider vinegar, cumin, black pepper, and paprika until well combined.
  3. Reserve ½ cup of marinade for later use. Add chicken thighs to the remaining marinade and let them marinate in the refrigerator for at least 4 hours or overnight.
  4. Preheat the grill to medium-high heat (around 400°F) and lightly oil the grates.
  5. Grill the chicken for about 10 minutes per side until it reaches an internal temperature of 165°F.
  6. During the last few minutes of grilling, add pineapple rings until golden on each side.
  7. Brush reserved marinade over the chicken before serving.
