  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley (for garnish)

Instructions

  1. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and black pepper.
  2. In a medium pot, bring chicken broth with salt to a boil; add rice, cover, and simmer for 18-20 minutes until tender.
  3. Heat olive oil in a large skillet over medium-high heat; cook chicken for 6-7 minutes per side until golden brown. Remove from skillet.
  4. In the same skillet, melt butter; whisk in flour until lightly golden. Gradually add milk and chicken broth, cooking until thickened.
  5. Stir in garlic powder, thyme, cheddar, and Parmesan until melted.
  6. Return chicken to skillet; spoon sauce over it; simmer for an additional 3-4 minutes.
  7. Serve over cooked rice and garnish with chopped parsley.
