Ingredients

  • 450 g chicken breast, cut into bite-sized pieces
  • 2 tbsp whole grain mustard
  • 2 tbsp honey
  • 1 red bell pepper, sliced
  • 1 cup baby spinach leaves
  • 1 cup cherry tomatoes
  • 1 cup white rice

Instructions

  1. Cook rice in salted water until fluffy; set aside.
  2. Roast cherry tomatoes with olive oil, salt, and pepper at 200C (400F) for 10–12 minutes.
  3. In a skillet, heat olive oil over medium heat, add seasoned chicken pieces, and cook until golden brown.
  4. Stir in honey, mustard, soy sauce, and lemon juice; cook until thickened.
  5. Add sliced bell pepper; cook for another 2 minutes.
  6. Assemble bowls by serving chicken over spinach with roasted tomatoes and rice.
