  • 2 tablespoons olive oil (divided)
  • 2 cloves garlic (minced)
  • ½ cup honey
  • 2 tablespoons soy sauce
  • Juice and zest of 2 limes
  • ¼ teaspoon red pepper flakes
  • Fresh cilantro (for garnish)

Instructions

  1. Season chicken thighs with salt, pepper, and chili powder; drizzle with 1 tablespoon olive oil.
  2. Heat remaining olive oil in a large skillet over medium-high heat; cook chicken for 5-6 minutes on each side until golden brown and cooked through (internal temperature of at least 165°F).
  3. Remove chicken and sauté minced garlic in the same skillet until fragrant.
  4. Deglaze pan with water, then add honey, soy sauce, lime juice, lime zest, and red pepper flakes; whisk until combined.
  5. Simmer sauce for 2-3 minutes until slightly thickened.
  6. Add chicken back to skillet, coat with sauce, garnish with cilantro if desired, and serve warm.
