  • 2 large boneless skinless chicken breasts
  • 2 tablespoons honey
  • Juice and zest of 2 limes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • 1 large ripe mango, diced
  • ¼ cup red onion, finely chopped
  • Fresh cilantro, chopped

Instructions

  1. In a mixing bowl, whisk together honey, lime juice and zest, olive oil, minced garlic, cumin, paprika, salt, and pepper. Coat the chicken breasts in the marinade and let sit for at least 30 minutes.
  2. In another bowl, combine diced mango, red onion, cilantro, lime juice, salt, and pepper. Mix well and let sit for 10–15 minutes to meld flavors.
  3. Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken until fully cooked (165°F internal temperature). Let rest for a few minutes before slicing.
  4. Plate the sliced chicken and top generously with mango salsa.
