Ingredients

  • Carrots
  • Olive oil
  • Cinnamon
  • Lemon
  • Greek yogurt
  • Feta cheese
  • Cooked chickpeas
  • Honey
  • Rose harissa paste
  • Salt
  • Black pepper

Instructions

  1. Preheat your oven to 190°C (375°F).
  2. Toss trimmed carrots with olive oil, cinnamon, salt, and pepper in a roasting tray. Roast for 30 minutes until tender.
  3. While the carrots roast, chop carrot tops and mix them with lemon juice and olive oil in a pestle and mortar to create a chunky herb sauce.
  4. In a bowl, whisk together Greek yogurt and crumbled feta until smooth.
  5. Add drained chickpeas to the roasting tray after 30 minutes and return to the oven for another 15 minutes until crisp.
  6. Combine honey and harissa paste in a small bowl. Drizzle over roasted carrots and chickpeas.
  7. On a serving plate, spoon whipped feta, top with roasted vegetables, drizzle with herb oil, and serve warm.
