Ingredients

  • 1 liter of 95° alcohol (or 40° fruit alcohol)
  • 400g sugar (or 225g if using fruit alcohol)
  • Zest from 6 organic untreated lemons
  • 1.2 liters of spring water (or half a glass if using fruit alcohol)

Instructions

  1. Wash the lemons thoroughly and zest them carefully, avoiding the bitter white pith.
  2. Combine lemon zest with alcohol in a large jar and let it macerate for one month in a cool, dark place, shaking occasionally.
  3. After one month, strain the mixture to remove zest.
  4. Prepare sugar syrup by boiling sugar with water until dissolved; allow cooling completely.
  5. Mix cooled syrup with the strained alcohol and bottle it using a funnel.
  6. Let it rest for at least ten days in the refrigerator or freezer before serving.
