  • 85g lukewarm milk (⅓ cup)
  • 60g lukewarm water (¼ cup)
  • 6g active dry yeast (about 2 tsp)
  • 5g honey (1 tsp)
  • 25g melted butter (1 ½ tbsp)
  • 250g all-purpose flour (2 cups)
  • 140g cold butter (10 tbsp) for layering
  • 1 egg yolk for egg wash
  • Additional milk or cream for egg wash

Instructions

  1. In a bowl, mix lukewarm milk, water, and honey. Once combined, sprinkle yeast on top and let it froth for 5-10 minutes.
  2. In a separate bowl, whisk together flour and salt before creating a well in the center.
  3. Pour the yeast mixture and melted butter into the well of flour and mix until combined; knead briefly until smooth.
  4. Shape dough into a ball and let it rise in a greased bowl covered with plastic wrap for 1-2 hours until doubled in size.
  5. Prepare the cold butter layer by pounding it into an even rectangle between parchment paper, then chill both dough and butter.
  6. Roll out the dough large enough to encase the butter; fold over to cover, then roll out again and perform three folds with resting time between each.
  7. Shape croissants by cutting triangles from rolled-out dough and rolling tightly from base to tip.
  8. Let formed croissants rise on a baking sheet for another hour before brushing with egg wash and baking at 375°F (190°C) for 20-25 minutes.
