  • 6 quarts fresh peaches (peeled, pitted, sliced)
  • 7 cups granulated sugar
  • 2 cups cold water
  • 1¾ cups cook-type Clear Jel
  • 5¼ cups peach juice or water
  • ½ cup bottled lemon juice
  • Ground cinnamon and nutmeg (optional)

Instructions

  1. Sterilize 4–5 quart-size canning jars and keep them warm.
  2. Blanch fresh peach slices in boiling water for about 30 seconds, then transfer them to an ice bath to cool before peeling and slicing.
  3. In a large pot, combine sugar and Clear Jel, then gradually stir in cold water and peach juice. Cook over medium-high heat until thickened.
  4. Add lemon juice and spices, then fold in warm peach slices.
  5. Pour the filling into prepared jars, leaving 1 inch of headspace, remove air bubbles, and seal with lids.
  6. Process jars in a boiling water bath for about 30 minutes.
  7. Let jars cool undisturbed for 12–24 hours before storing.
