- 1 cup imitation crab (or real crab meat)
- 1 ripe avocado, sliced
- 1 small cucumber, cut into strips
- 2 tbsp spicy mayo
- ½ cup toasted panko breadcrumbs
Instructions
- Rinse rice under cold water until clear, then cook with water until tender. Mix rice vinegar, sugar, and salt over low heat; fold into warm rice and let cool.
- Set up your rolling station: wrap a bamboo mat in plastic wrap and have a bowl of water nearby to prevent sticking.
- Lay nori shiny side down on the mat; spread cooled rice evenly across it. Flip nori over and layer crab, avocado, cucumber, and optional add-ins.
- Roll tightly using the mat; seal edges as you go. Brush with spicy mayo or eel sauce and sprinkle with panko.
- Slice into 8 pieces using a sharp knife dipped in water.
