  • 1 lb mild Italian sausage
  • 2 ribs celery
  • 1 yellow onion
  • 2 large carrots
  • 5 cloves garlic
  • 1 medium zucchini
  • 1 Yukon gold potato
  • 1 cup green beans
  • 1 can red kidney beans
  • 1 can white beans (navy or cannellini)
  • 1 can fire-roasted diced tomatoes
  • 5 cups chicken broth
  • ½ cup uncooked ditalini pasta

Instructions

  1. In a large pot over medium heat, brown the Italian sausage until no longer pink; remove and set aside.
  2. Sauté celery, onion, carrots, salt, pepper, and chili flakes for about 8-10 minutes until softened.
  3. Add minced garlic and cook for an additional 1-2 minutes.
  4. Return sausage to the pot along with zucchini, potato, green beans, beans, tomatoes, broth, bay leaves, and parmesan rind. Stir well and bring to a gentle boil. Reduce to medium-low and simmer for 30-45 minutes.
  5. Stir in pasta and continue simmering for another 7-10 minutes until al dente.
  6. Remove bay leaves and serve hot.
