  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 large eggs
  • ¾ cup granulated sugar
  • ½ cup sour cream (or plain Greek yogurt)
  • ¼ cup all-purpose flour
  • ½ teaspoon vanilla extract
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. For the crust, cream together softened butter and granulated sugar. Gradually mix in flour and salt until crumbly. Press evenly into the pan.
  3. Bake the crust for 15 minutes until lightly golden.
  4. In a separate bowl, combine diced peaches with sugar, lemon juice, and cornstarch. Toss to coat.
  5. Spread the peach mixture over the baked crust.
  6. For the topping, whisk together eggs, sugar, sour cream, flour, and vanilla until smooth. Pour over the peach layer.
  7. Bake for an additional 35–40 minutes until set and lightly golden.
  8. Allow to cool completely before slicing into squares.
