  • 4 large egg whites
  • 1 cup granulated sugar (200g)
  • 1 tsp white vinegar
  • 1 tsp pure vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 cup heavy whipping cream (240ml)

Instructions

  1. Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper and draw an 8-inch circle.
  2. In a clean bowl, beat egg whites until soft peaks form, about 2 minutes.
  3. Gradually add sugar, one tablespoon at a time, beating until stiff peaks form and glossy (about 5 minutes).
  4. Gently fold in vinegar and vanilla extract.
  5. Spread meringue onto the prepared baking sheet within the circle, creating swirls for texture.
  6. Bake for about 1 hour until dry to touch but slightly soft in the center. Turn off the oven and let cool completely inside.
  7. Once cooled, whip the heavy cream until soft peaks form and spread over the meringue. Top with mixed berries before serving.
