  • 4 cups low-sodium vegetable broth
  • 1 can (14 oz) diced tomatoes

Instructions

  1. Prepare the meatballs: In a bowl, mix ground beef, breadcrumbs, parsley, garlic, salt, and pepper until combined. Form into small balls (about 2 inches in diameter).

  3. Sauté the vegetables: In the same pot, add sliced carrots and cubed potatoes. Sauté for about 5 minutes until slightly softened.
  4. Add liquids: Pour in vegetable broth and diced tomatoes; stir well while scraping the bottom of the pot.
  5. Combine: Return meatballs to the pot, bring to a gentle boil, then reduce heat to simmer for about 30 minutes.
