- 1 pound boneless skinless chicken breasts
- 4 ounces cream cheese (optional)
- 1 cup full-fat coconut milk
Instructions
- In a skillet, heat olive oil over medium heat. Sauté onion and poblano peppers for 3–4 minutes until soft. Add garlic and cook for an additional minute before transferring to a slow cooker.
- In the slow cooker, combine chicken broth, beans, corn, spices, and salt. Mix well.
- Nestle the chicken into the mixture, submerging it slightly. Cover and cook on high for 4–6 hours or low for 6–8 hours.
