  • 1 cup pumpkin puree (canned)
  • 2/3 cup maple syrup or honey
  • 1/4 cup Greek yogurt (plain or vanilla)
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix wet ingredients (pumpkin puree, maple syrup or honey, Greek yogurt, oil, egg, vanilla) in a bowl until smooth.
  3. In another bowl, whisk dry ingredients (whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, salt).
  4. Gradually combine wet and dry mixtures just until blended; do not overmix.
  5. Fill muffin tins two-thirds full and bake for about 18 minutes or until a toothpick comes out clean.
  6. Cool in the tin for five minutes before transferring to a wire rack.
