  • 1.5 lbs baby potatoes (halved or quartered)
  • 1 block (7 oz) feta cheese
  • 1.5 cups cherry tomatoes (halved)
  • 3 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • Salt and black pepper (to taste)
  • Fresh basil or parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and cut the baby potatoes.
  2. In a large baking dish, combine the potatoes, cherry tomatoes, minced garlic, olive oil, oregano, black pepper, and a pinch of salt. Toss well.
  3. Place the feta block in the center of the dish and drizzle with olive oil.
