Ingredients

  • 2 salmon fillets
  • 2 cups baby potatoes
  • 1 bunch asparagus
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 tsp lemon juice (optional)
  • 1 clove garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp olive oil or melted butter
  • 1 cup shredded mozzarella or cheese blend
  • Olive oil, salt & pepper
  • Optional: pinch of Italian herbs or chili flakes

Instructions

  1. Preheat the oven to 400°F (200°C). Toss halved baby potatoes with olive oil, minced garlic, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden brown.
  2. On another baking sheet, place trimmed asparagus. Drizzle with olive oil, season, and top with shredded cheese. Bake for the last 10 minutes alongside the potatoes.
  3. Season salmon fillets with paprika, garlic powder, salt, and pepper. Heat a grill pan over medium-high heat with olive oil. Cook salmon for 4-5 minutes per side until golden brown.
  4. Serve grilled salmon with roasted garlic potatoes and cheesy asparagus on the side.
