  • 4 boneless chicken thigh fillets
  • 3 tablespoons olive oil
  • 100 ml freshly squeezed lime juice
  • 2 tablespoons chopped cilantro
  • 2 cloves crushed garlic
  • ½ yellow bell pepper, sliced
  • ½ red bell pepper, sliced
  • ½ onion, sliced
  • 5 cups Romaine lettuce, washed and dried
  • 2 avocados, sliced

Instructions

  1. In a mixing bowl, combine olive oil, lime juice, cilantro, garlic, brown sugar, chili flakes, cumin, and salt. Whisk until blended.
  2. Marinate the chicken thighs in half of the mixture for at least two hours in the refrigerator; reserve the rest for later.
  3. Heat olive oil in a grill pan over medium-high heat and grill chicken thighs for about 6-7 minutes on each side until golden brown and cooked through.
  4. Sauté sliced bell peppers and onion in the same pan until soft but slightly crunchy.
  5. Slice the grilled chicken and assemble the salad with Romaine lettuce, avocado slices, sautéed vegetables, grilled chicken, and drizzle with reserved marinade before serving.
