Ingredients
- 2 lbs boneless chicken thighs (cut into 1½ to 2 inch pieces)
- ½ teaspoon saffron (ground and dissolved in hot water)
- 1 large onion (grated)
- 2 garlic cloves (grated)
- ⅓ cup lemon juice (or yogurt + lemon juice)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Bell peppers, red onions, and tomatoes for grilling
Instructions
- Grind saffron with a pinch of salt using a mortar and pestle, then dissolve it in hot water.
- Trim excess fat from chicken thighs. In a bowl, combine saffron water, grated onion, grated garlic, lemon juice (or yogurt), olive oil, salt, and pepper. Add chicken and coat well.
- Marinate the chicken for at least 6 hours (preferably overnight) in the refrigerator.
- Preheat your grill (charcoal or gas) while preparing skewers with marinated chicken and vegetables.
- Grill kabobs over medium heat for about 6-8 minutes on each side while basting regularly until cooked through.
