  • 68 boneless skinless chicken thighs (or breasts/tenders)
  • 1/2 cup + 3 tablespoons olive oil
  • 1/2 cup brown sugar
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Kosher salt and fresh ground pepper to taste
  • Sesame seeds and chopped cilantro for garnish

Instructions

  1. Preheat your grill to 350°F using pecan or hickory wood.
  2. Brush chicken with olive oil and season with salt and pepper.
  3. In a mixing bowl, whisk together olive oil, brown sugar, rice vinegar, soy sauce, sesame oil, garlic, ginger, and optional chili flakes.
  4. Cook the sauce in a saucepan over medium heat until thickened (3-5 minutes). Reserve some for glazing.
  5. Grill chicken on indirect heat for about 6-8 minutes per side, glazing generously with sauce as you go until it reaches an internal temperature of 165°F.
  6. Let rest for 5 minutes before serving; garnish with sesame seeds and cilantro.
