  • 1 liter (4 cups) chicken stock
  • 3 tbsp olive oil
  • 200 g (7 oz) feta cheese
  • 100 g (3.5 oz) cream cheese
  • 23 lemons
  • Garlic cloves
  • Dried oregano

Instructions

  1. Boil diced potatoes in chicken stock with lemon juice until tender.
  2. Drain and let steam dry for 10 minutes.
  3. Toss dried potatoes with olive oil, oregano, and garlic; roast at 390°F (200°C) for 40-45 minutes until golden brown.
  4. Blend feta, cream cheese, olive oil, and honey until smooth.
  5. Serve roasted potatoes over the whipped feta; garnish with parsley and lemon juice.
