  • 150g baby plum tomatoes
  • 100g feta cheese
  • 100g kalamata olives
  • 75g cucumber
  • Fresh parsley
  • Lemon juice
  • Red onion
  • Garlic
  • Olive oil
  • Red apple vinegar
  • Dried oregano

Instructions

  1. Whisk together olive oil, vinegar, parsley, oregano, salt, and pepper in a large bowl.
  2. Add halved tomatoes, cubed feta, olives, diced onion, and garlic to the bowl. Stir gently to combine and let marinate for at least an hour.
  3. Cook orzo in boiling salted water until al dente; drain and rinse under cold water.
