  • 1 lb boneless, skinless chicken breasts
  • 6 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 chopped onion
  • 2 cloves minced garlic
  • 1 cup orzo pasta (or rice)
  • Juice and zest of 2 large lemons
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, place chicken breasts and cover with chicken broth. Bring to a gentle boil.
  2. Reduce heat and simmer until the chicken is cooked through (15-20 minutes). Remove the chicken and let it cool.
  3. In another pot, heat olive oil over medium heat. Sauté chopped onion, carrots, and celery for about 5-7 minutes until softened.
  4. Add minced garlic and sauté for an additional minute.
  5. Shred the cooled chicken and combine it with the sautéed vegetables.
  6. Stir in orzo pasta along with additional chicken broth, lemon juice, lemon zest, oregano, thyme, salt, and pepper.
  7. Simmer for 10-12 minutes or until pasta is cooked.
