Ingredients
- 4 large tomatoes
- 4 large bell peppers
- 1 cup rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- Salt and pepper to taste
- 1 cup water
Instructions
- Preheat your oven to 180°C (350°F).
- Prepare the vegetables by cutting off their tops and scooping out the insides.
- In a pan, heat olive oil and sauté the onion and garlic until soft.
- Add rice, parsley, mint, salt, and pepper; cook briefly.
- Stir in water and reserved vegetable insides; cook until rice is half done.
- Stuff each tomato and bell pepper with the rice mixture.
- Place them upright in a baking dish, cover with their tops, drizzle with olive oil.
- Bake for about 1 hour or until vegetables are tender.
