Ingredients

  • 2 cups lukewarm water
  • 2 teaspoons granulated sugar
  • 1 and 1/2 teaspoons instant yeast
  • 4 cups all-purpose flour
  • 1 and 1/2 teaspoons salt
  • 1/4 cup olive oil
  • 14 oz feta cheese

Instructions

  1. In a stand mixer bowl, combine lukewarm water, sugar, and yeast. Let sit for 8-10 minutes until frothy.
  2. In a separate bowl, whisk together flour and salt. Gradually add this mixture and olive oil to the yeast mixture in the stand mixer.
  3. Knead on low speed for about 10 minutes until smooth.
  4. Place dough in an oiled bowl, cover with plastic wrap, and let rise in a warm place until doubled (about 1.5 to 2 hours).
  5. Punch down dough and transfer to an oiled work surface. Flatten into a circle and crumble feta on top before folding edges over.
  6. Preheat oven to 425°F (220°C) while allowing shaped dough to rise for another 30 minutes on a baking tray.
  7. Brush with melted butter mixed with cream and sprinkle sesame seeds if desired.
  8. Bake for about 25-30 minutes until golden brown.
