  • 4 small chicken breasts (about 1 1/4 pounds)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cups cooked rice or quinoa
  • 2 cups halved grape or cherry tomatoes
  • 1 cup sliced red onion
  • 1 cup plain Greek yogurt
  • Fresh dill

Instructions

  1. Whisk together marinade ingredients: olive oil, lemon juice, honey, garlic powder, oregano, basil, salt, pepper, and red pepper flakes.
  2. Pound chicken to 1/2 inch thick and marinate for at least 30 minutes.
  3. Mix tzatziki ingredients: Greek yogurt, grated cucumber, lemon juice, minced garlic, salt, and dill; refrigerate until serving.
  4. Cook rice or quinoa according to package instructions while chopping vegetables.
  5. Air fry chicken at 380°F for about 10-12 minutes until cooked through (internal temp of 165°F). Alternatively, sauté in a skillet until golden brown.
  6. Let chicken rest before slicing.
  7. Assemble bowls with rice/quinoa as the base topped with veggies, sliced chicken, and tzatziki.
