  • 1 (8 oz) center-cut beef filet
  • 1 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 cup finely chopped mushrooms (cremini or button)
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme leaves
  • 3 slices prosciutto
  • 1 sheet puff pastry
  • 1 egg yolk (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Sear the seasoned beef filet in olive oil for 1–2 minutes on each side until browned. Allow it to rest and brush with Dijon mustard.
  2. In the same skillet, sauté garlic and thyme in butter until fragrant. Add chopped mushrooms and cook until dry. Let cool.
  3. Layer prosciutto on plastic wrap, spread cooled mushroom mixture, place beef on top, roll tightly, and chill for 15 minutes.
  4. Roll out puff pastry, wrap the beef log, seal with egg wash, and brush the top with more egg yolk.
  5. Bake in a preheated oven at 400°F (200°C) for 15–20 minutes until golden brown. Rest for 5 minutes before slicing.
