  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons light brown sugar
  • 2/3 cup milk, dairy or non-dairy
  • 1 tablespoon oil
  • 2 eggs or 6 tablespoons aquafaba
  • 2 teaspoons vanilla extract
  • 2 apples, peeled and finely diced
  • 3 cups powdered/icing sugar
  • 3 tablespoons milk, dairy or non-dairy
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together flour, xanthan gum (if needed), baking powder, salt, cinnamon, and sugar until combined.
  2. Stir in milk, oil, eggs (or aquafaba), and vanilla extract until smooth.
  3. Gently fold in the diced apples.
  4. Heat oil in a skillet to 360-375°F (80-90°C).
  5. Scoop batter into hot oil and fry until golden brown on both sides (about 3 minutes per side).
  6. Drain on a wire rack and cool slightly before glazing with icing made from powdered sugar, milk, and vanilla.
