- 1 ripe plantain

Instructions
- Season the salmon fillet with salt, pepper, and chili flakes. Heat olive oil in a non-stick skillet over medium heat and sear the salmon skin-side down until crispy (about 4-5 minutes). Flip it over, glaze with honey or maple syrup, and cook until caramelized (about 4-5 more minutes).
- In another pan, fry sliced plantains in oil until golden brown on both sides (2-3 minutes per side). Drain on paper towels and sprinkle with sea salt.
- In the same pan as the plantains, sauté fresh spinach until wilted (2-3 minutes), adding garlic if desired.
