  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup unsalted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 2 egg yolks (at room temperature)
  • 1 tsp vanilla
  • 1/3 cup unsulphured molasses

Instructions

  1. Prepare the cheesecake filling by mixing cream cheese, granulated sugar, and vanilla until smooth.
  2. In a separate bowl, cream softened butter and brown sugar until fluffy; add egg yolks one at a time along with molasses and vanilla.
  3. Whisk together flour, salt, baking soda, and spices in another bowl; gradually combine with wet ingredients until just mixed.
  4. Chill dough for about 30 minutes. Preheat oven to 350°F.
  5. Form cookie balls with cheesecake filling inside; roll in spiced sugar before placing on parchment-lined baking sheet.
  6. Bake for about 11 minutes or until edges are golden; cool on wire rack.
