  • 2 eggs
  • 2 tablespoons water
  • 2 tablespoons cocoa powder
  • 1 tablespoon instant coffee
  • 1/4 cup vegetable oil
  • 1/3 cup light brown sugar
  • 1/3 cup granulated sugar
  • 1/3 cup butter
  • 1 large egg yolk
  • 2/3 cup evaporated milk
  • 2 teaspoons vanilla extract
  • 3/4 cup chopped pecans
  • 1 cup shredded sweetened coconut

Instructions

  1. Preheat your oven according to the brownie mix package instructions.
  2. In a bowl, combine the brownie mix, eggs, vegetable oil, cocoa powder, water, and instant coffee. Mix until smooth.
  3. Pour the batter into an 8×8-inch greased baking pan and bake as directed.
  4. While the brownies cool, prepare the frosting by combining brown sugar, granulated sugar, butter, and evaporated milk in a saucepan over medium heat. Stir until melted and smooth.
  5. Add egg yolk to the saucepan and cook until thickened (about 3–4 minutes).
  6. Remove from heat and stir in vanilla extract, chopped pecans, and shredded coconut.
  7. Allow the frosting to cool slightly before spreading it over cooled brownies.
