  • 4 chicken breasts
  • 45 slices of turkey bacon, chopped
  • 2 cups baby spinach (or regular spinach, chopped)
  • 2 cups broccoli florets
  • 1/2 cup unsalted butter
  • 3 cloves garlic, minced
  • 2 cups golden potatoes, halved and cooked until tender
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Cook the turkey bacon in a skillet over medium heat until crispy. Remove and set aside.
  2. In the same skillet, use some rendered turkey bacon fat to cook the seasoned chicken breasts until golden brown on both sides.
  3. Add minced garlic to the skillet and sauté for one minute until fragrant.
  4. Incorporate broccoli florets and spinach, stirring until bright green.
  5. Add cooked golden potatoes to the skillet.
  6. Return the crispy turkey bacon and add unsalted butter in chunks; stir until well combined.
  7. Garnish with freshly chopped parsley before serving.
