- 6 large eggs
- 1/4 cup milk
- 2 1/2 tbsp olive oil
- 3/4 tsp ground turmeric
- 1/2 cup diced red onions
- 2 cloves garlic
- 8 oz fingerling potatoes
- 1 medium red pepper
- 1 scallion
- 1 cup baby spinach
- Freshly ground black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, whisk together eggs, milk, turmeric, and black pepper until smooth.
- Heat olive oil in an oven-safe skillet over medium heat. Sauté diced onions and minced garlic for about 2-3 minutes.
- Thinly slice the potatoes and add to the skillet. Cook for about 8-10 minutes until tender.
- Stir in diced red pepper and cook for another 2-3 minutes. Add spinach and scallion until wilted.
- Pour egg mixture over the vegetables in the skillet. Cook undisturbed for about 2-3 minutes.
- Transfer skillet to the oven and bake for 15-20 minutes until puffed and golden brown.
