  • 1/4 cup milk
  • 2 1/2 tbsp olive oil
  • 3/4 tsp ground turmeric
  • 1/2 cup diced red onions
  • 2 cloves garlic
  • 8 oz fingerling potatoes
  • 1 medium red pepper
  • 1 scallion
  • 1 cup baby spinach
  • Freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together eggs, milk, turmeric, and black pepper until smooth.
  3. Heat olive oil in an oven-safe skillet over medium heat. Sauté diced onions and minced garlic for about 2-3 minutes.
  4. Thinly slice the potatoes and add to the skillet. Cook for about 8-10 minutes until tender.
  5. Stir in diced red pepper and cook for another 2-3 minutes. Add spinach and scallion until wilted.
  6. Pour egg mixture over the vegetables in the skillet. Cook undisturbed for about 2-3 minutes.
  7. Transfer skillet to the oven and bake for 15-20 minutes until puffed and golden brown.
  8. Allow to cool slightly before slicing; serve warm or at room temperature.
