  • ½ cup coarsely chopped pecans
  • ¼ cup granulated sugar
  • 8 tablespoons unsalted butter (melted)
  • 2 pounds fresh strawberries (tops removed)
  • ¾ cup granulated sugar (for filling)
  • ⅓ cup boiling water
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the crust by mixing graham cracker crumbs, pretzels, pecans, and sugar; combine with melted butter and press into a greased springform pan. Chill while preparing filling.
  2. Puree 1½ cups of strawberries in a food processor. Add sugar, boiling water, and cornstarch; blend until smooth.
  3. Pour into a saucepan and bring to a boil over medium heat while stirring constantly for about 3 minutes until thickened.
  4. Remove from heat, stir in vanilla extract, and cool the glaze.
  5. Cut remaining strawberries and stir them into the cooled glaze before pouring into the prepared crust.
  6. Chill the pie for at least 2 hours before serving.
