Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 container (8 oz) Cool Whip, divided
- 1 package (3 oz) peach vegan gelatin
- 1 cup boiling water
- 2 cups diced fresh peaches
Instructions
- Preheat your oven to 350°F.
- In a mixing bowl, combine flour, melted butter, and sugar until well mixed. Press into a 9×13-inch baking dish and bake for 15 minutes or until golden. Let cool completely.
- In another bowl, beat cream cheese and powdered sugar until smooth. Fold in half of the Cool Whip and spread over the cooled crust.
- Dissolve peach gelatin in boiling water; let cool to room temperature before folding in diced peaches.
- Spoon the peach mixture over the cream layer and refrigerate for at least 4 hours until set. Top with remaining Cool Whip before serving.
