  • 3 pounds beef short ribs
  • 6 yellow onions, thinly sliced
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 8 cups beef stock
  • 1 cup dry red apple vinegar
  • 1 French baguette, sliced
  • 2 cups shredded Gruyère cheese

Instructions

  1. Season the short ribs with salt and pepper. In a Dutch oven, heat olive oil and brown the ribs on all sides; set aside.
  2. In the same pot, add butter and sliced onions; cook on low heat for 30-40 minutes until caramelized.
  3. Stir in minced garlic, deglaze with red apple vinegar, then reduce for a few minutes.
  4. Add beef stock, thyme, bay leaves, and return the short ribs to the pot. Cover and simmer for 2.5 to 3 hours until tender.
  5. While simmering, preheat the broiler. Toast baguette slices until golden brown; top with Gruyère cheese and broil until melted.
  6. Serve soup hot topped with Gruyère toast.
