Ingredients

Scale
  • 2 lbs Yukon Gold or Russet potatoes
  • 2 large onions
  • 2 tbsp butter or olive oil
  • 1 packet onion soup mix or 1 cup condensed French onion soup
  • 1 cup beef or vegetable broth
  • 1 cup shredded Gruyère cheese
  • ½ cup sour cream

Instructions

  1. Caramelize the onions: In a skillet over medium heat, melt butter and add sliced onions. Cook for 20-25 minutes until golden and soft.
  2. Prepare the potatoes: Thinly slice potatoes evenly and pat dry to remove moisture.
  3. Mix the base: In a bowl, combine sour cream, soup mix (or condensed soup), broth, and half of the cheese. Stir in caramelized onions.
  4. Layer casserole: Grease a baking dish. Layer half of the potatoes, followed by half of the onion mixture; repeat and finish with remaining cheese.
  5. Bake: Cover with foil and bake at 375°F (190°C) for 30 minutes; uncover and bake for another 15-20 minutes until golden.
