  • 2 tablespoons butter

  • ½ teaspoon dried thyme (or 1 teaspoon fresh thyme)
  • ½ cup beef broth (or vegetable broth for vegetarian version)
  • 4 large Yukon Gold potatoes, sliced ¼-inch thick
  • 1 tablespoon butter (for greasing)
  • 1 cup shredded Gruyère cheese
  • ½ cup Parmesan cheese, grated
  • 1 cup heavy cream or whole milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • Fresh thyme sprigs
  • Extra Parmesan cheese
  • Crispy fried onions (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, melt butter and olive oil over medium heat. Add sliced onions, salt, pepper, and sugar (if using). Cook until golden brown, about 15–20 minutes.
  3. Slice potatoes into thin rounds. Mix heavy cream, garlic powder, thyme, salt, and pepper in a bowl.
  4. In a greased baking dish, layer half the potato slices, half the caramelized onions, and half the cheeses. Repeat layers.
  5. Pour broth over layers. Cover with foil and bake for 45 minutes; uncover for the last 15 minutes.
