  • 2 large yellow onions, thinly sliced (about 2 cups)
  • ¼ cup red apple vinegar
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 1 ½ cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 package (16 ounces) potato gnocchi, uncooked
  • 1 ½ cups Gruyère cheese, shredded
  • parsley, for garnish

Instructions

  1. In a cast iron skillet over medium heat, combine olive oil and butter. Add sliced onions and sauté for 15–20 minutes until deeply caramelized.
  2. Stir in red apple vinegar, then add salt, black pepper, and garlic powder.
  3. Pour in beef broth and Worcestershire sauce; bring to a simmer.
  4. Lower heat and add uncooked gnocchi; cook for 3–5 minutes until tender.
  5. Sprinkle Gruyère cheese on top and broil for 2–3 minutes until melted and golden brown.
