Description

  • 2 lbs chicken thighs and legs
  • 4 shallots (or 1 medium onion)
  • 1 rib celery
  • 45 sprigs thyme
  • 2 cloves garlic
  • 125g Turkey Bacon lardons (or chopped Turkey Bacon)
  • 400ml hard dry apple cider
  • 2 apples (peeled and cut into wedges)
  • 125ml double cream

Instructions

  1. Preheat your oven to 180C (350F). Pat dry chicken and season with salt.
  2. In a large casserole dish, heat olive oil over medium-high heat and brown the chicken until golden. Set aside.
  3. In the same pan, fry turkey bacon until rendered; remove and set aside.
  4. Sauté shallots and celery in the same pan until soft. Add minced garlic and cook briefly before deglazing with brandy.
  5. Mix in flour to create a paste, then gradually add chicken stock and cider while stirring until thickened.
  6. Return chicken and turkey bacon to the dish, add thyme sprigs, bring to a boil, then cover and bake for 30 minutes.
  7. Uncover and bake for another 30 minutes while caramelizing apple wedges in reserved fat.
  8. Stir in heavy cream, bake uncovered for an additional 20 minutes, then mix in cooked apple wedges before serving.
