  • 2 medium oranges (about 400 g)
  • 150 g almond meal
  • 100 g shelled pistachios (finely ground)
  • 6 large eggs
  • 200 g granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat the oven to 170°C (340°F) and line a 23 cm (9 inch) springform pan with parchment paper.
  2. Boil the oranges in water for 60 minutes; drain, cool, and puree until smooth.
  3. In a large bowl, whisk together eggs and sugar until pale; stir in orange puree.
  4. In another bowl, combine almond meal, pistachios, baking powder, and salt; gently fold into the egg mixture.
  5. Pour batter into the prepared pan and smooth the top; bake for 50-60 minutes until set.
  6. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
