  • 2 cups mixed vegetables (bell peppers, zucchini, carrots, broccoli)
  • 2 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ cup tahini
  • 2 tbsp lemon juice
  • ½ tsp garlic powder
  • Fresh herbs for garnish (parsley or cilantro)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop the mixed vegetables into bite-sized pieces. Place them in a large bowl.
  3. Drizzle olive oil over the veggies and season with salt, pepper, and garlic powder. Toss until well coated.
  4. Spread the vegetables on a baking sheet in a single layer and roast for 25-30 minutes until golden brown.
  5. While roasting, mix tahini and lemon juice in a small bowl. Gradually add water until smooth.
