  • 34 boneless, skinless chicken breasts (about 1 lb.)
  • 1 packet ranch seasoning mix (1 oz.)
  • 8 flour or corn tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese (8 oz.)
  • ½ cup sour cream or Greek yogurt
  • 2 green onions, chopped
  • 1 cup low-sodium chicken broth
  • 4 oz. cream cheese

Instructions

  1. Preheat oven to 375°F (190°C) and lightly spray a baking dish with nonstick spray.
  2. In a skillet over medium heat, cook the chicken in oil until golden brown, about 5-7 minutes per side. Shred the cooked chicken and mix it with ranch seasoning.
  3. In a saucepan over low heat, combine cream cheese and chicken broth until smooth. Mix half into the shredded chicken.
  4. Place about two tablespoons of the chicken mixture in each tortilla, roll tightly, and place seam-side down in the baking dish.
  5. Pour remaining sauce over enchiladas and top with cheese.
